Santomas Rose CasmeRe is carefully blended of refosco, merlot, cabernet sauvignon and syrah. After mechanically removing the stems, perfectly healthy and fully ripe grapes of vintage 2014 were additionaly manually selected. A few hours of maceration in lying rototanks followed, with the clean free run being afterwards separated from skins (saignee method) and followed by fermentation with selected yeast at 16°C. The wine was bottled before spring thus preserving its young freshness.
The wine is light pink pastel colors. The color of rose petals (enologist Claude Gros , Narbonne).
Clean, intense and complex, prevailing fruity fragrances: the smell of mandarin, raspberries and strawberries (enologist Claude Gros, Narbonne).
Wine is elegant, dry, full-bodied and lively. Pleasant freshness and taste of banana, passion fruit and green apple (Granny Smith). In the aftertaste it remains mainly the taste of berries and pomegranates (enologist Claude Gros, Narbonne).
Perfect match with full range of summer dishes: fish, meat and vegetable. The most interesting combinations achieved if excellent support to venison carpaccio, grilled blue fish (sardines, mackerel) and dishes that combine vegetables and cheese (pasticio with Swiss chard and parmesan, lasagna with fennel and mozzarella, roasted vegetables). Due to its structure, on the one hand, it allows the combination of light and raw food (tuna carpaccio, fish mouse, octopus salad ), where you can replace white wine, on the other hand, a pleasant acid and only the body of the wine allow blending of white and red meat, pasta with red or white sauces, risottos with vegetables or seafood, shrimp… The pairings is really great.
